When you live on a remote tropical island in the provincial Philippines you learn that the most reliable source of amazing tasting food is from your own kitchen! Since 2009 The Craic House has been on a slow journey of self sufficiency, trying to make everything we can in-house so that you, our customers, can have reliable and consistently tasty and fresh food.
Shortly after opening in 2010 it became apparent that bread wasn’t going to bake itself so the Kitchen Crew worked on making our great rustic loaf and soon added our own delicious burger buns which fly out the door today. Every few days our customers ask us about the smells emanating from the kitchen in the afternoon – this will be our Red Pepper Relish or Beer and Red Onion Relish which we make once or twice a week to complement burgers, quesadillas and anything else. Did we mention all burgers, quesadillas, empanadas are all made fresh every day in house?
Our latest development is very exciting in its simplicity – fresh herbs. Malapascua is a challenging environment for fresh produce but increasingly The Craic House is able to provide magical flavours plucked right from our property. For a long time our own fresh coconuts have been providing milk straight from the shell into your Laksa or Coconut curries but now we pick our own fresh thyme, tarragon, mint and basil and it goes straight to your plate.
Veteran diners of the The Craic House know all about our famous Garlic and Rosemary Potatoes but you haven’t lived until you’ve tried our new Garlic and Tarragon Roast Potatoes. A small amount of fresh tarragon brings such powerful flavour to this dish that there is never enough.
One of our most popular new dishes is Pan Seared Fish with a Coconut Lime Sauce (all sourced here) and a side dish of a Spicy Lentil and Fresh Mint Salad. Watch out for the cooks as they amble over to the herb garden to as they prepare to make your lunch! You know its going to be a good day.
The Craic House refuses to be limited by our location. We don’t want to offer the same lazy fare as is often found in The Philippines. We won’t use packets of anything or pre made products – everything is made fresh or . . . its not on the menu. Simple!
